Fruit Cocktail Pound Cake Recipe
This is another estate sale purchased recipe and one that I really like because it is so moist, so full of wonderful flavors and very elegant looking on the platter. Be prepared to hand out the recipe, this one is addicting

Ingredients
  • 1 cup vegetable oil
  • 2 cups fruit cocktail (reserve 4 tablespoons juice)
  • 2 cups granulated sugar
  • 1 cup flaked coconut
  • 3 cups self-rising flour
  • 1 cup chopped pecans
  • 3 eggs
  • 1 teaspoon vanilla flavoring
  • Icing:
  • 4 tablespoons juice from fruit cocktail
  • 1 cup powdered sugar

Directions
  1. Mix ingredients in order listed then pour in greased and floured tube pan and bake at 350 for 1 hour. Cool in pan for 10 minutes then turn out on serving platter and cool completely. Combine cocktail juice and sugar together until smooth then drizzle over cake.
