How to make it

  • To prepare tender chicken....
  • In zip lock bag, toss chicken with about 2 T Olive Oil, and a litle pepper. Don't salt it!
  • Bake chicken at 350 for 20 min, in shallow baking pan (like a jelly roll pan)
  • Make sure it's done, take out and let it rest.
  • Prepare lettuce, tomatos, cheese and put in bowls.
  • Guacamole...
  • 3-4 ripe avocados...
  • Add the lime juice, green sauce, dash of salt and pepper
  • Add the sour cream, and mix in mixer, if you have hand blender - that works great...it's smooth and creamy!
  • Prepare chicken....
  • Depending how you like it, either shread or chop chicken, and follow the directions on the Taco mix.
  • Cover and keep warm.
  • Prepare taco shells............
  • Heat cooking oil in frying pan.
  • Place tortillas gently in oil, and flip after a few seconds with tongs.
  • Fry for only 4 or 5 seconds on each side.
  • Place on paper towel, and place another papertowel over it, and repeat the tortilla frying flipping thing.
  • The paper towels between each layer, help to absorb the excess oil.
  • Ready now to serve?
  • On your plate...Open taco shells, add chicken, lettuce, cheese, tomatoes and top with sour cream, and that heavenly guacamole!
  • So messy....and SO great...it's hard not to eat 3 or 4.
  • Don't forget the taco sauce!
  • Add cilantro if you like it!
  • Try to get all that into that shell...use a fork!
  • Goes GREAT with my home-made refried beans.!
