This is a great recipe from a former coworker.

Ingredients
  • 3 c. flour
  • 1 t. salt
  • 1 t. ground cinnamon
  • 2 c. sugar
  • 3 eggs, well beaten
  • 1 1/4 c. salad oil
  • 2 10 oz pkg frozen, sliced strawberries, thawed and drained
  • 1 1/4 c. chopped pecans
  • red food coloring, optional

Directions
  1. Combine flour, salt, soda, cinamon and sugar.
  2. Make a well in center of dry ingredents, add eggs and oil, stirring only until dry ingredients are moistened.
  3. Stir in strawberries and pecans.
  4. Blend in food coloring, if desired.
  5. Spoon batter into two lightly greased 8-inch loaf pans.
  6. Bake at 350 degrees for 1 hour or until bread tests done.
  7. Let stand overnight before slicing.
