Skillet Lasagna Recipe
This is a very easy dish to prepare when you are in a hurry bit it is good for you to. have it with a big fresh veggie salad and a crusty French bread

Ingredients
  • 1 small onion, chopped
  • 1 tsp. minced garlic, more if you like a lot of garlic like I do
  • 1 Tbsp. olive oil
  • 1 (26 oz.) jar Classico tomato and basil pasta sauce
  • 1/2 ( 12 oz. ) pkg multigrain extra-wide egg noodles
  • 1/4 tsp. salt
  • 1/4 tsp. dried crushed red pepper
  • 1/2 cup ricotta cheese
  • 1 cup shredded Italian six-cheese blend
  • 2 Tbsp. chopped fresh basil

Directions
  1. Saute onion and garlic in hot oil in a 1" skillet over medium heat 5 minutes until vegetables are tender.
  2. Stir in pasta sauce, egg noodles and 1 cup water.
  3. Bring to a boil, reduce heat to medium low ans simmer, stirring occasionally 8 to 10 minutes or until pasta is just tender and liquid is almost absorbed.
  4. Stir in salt and crushed red pepper.
  5. Stir together ricotta and 1/2 cup shredded cheese.
  6. Drop by heaping Tbsp. over pasta.
  7. Sprinkle with remaining 1/2 cup shredded cheese.
  8. Cook, covered over low heat 5 minutes or until throughly heated and cheese is melted.
  9. Remove from heat and let stand 5 minutes.
  10. Sprinkle with basil.
