Grilled Eggplant Parmesan

- 2 small eggplants shopping list
- 1/4tsp salt shopping list
- 1/2tsp gr. black pepper shopping list
- 2c prepared marinara sauce,divided shopping list
- 1(.75-oz.) pkg. fresh basil shopping list
- 1/2(16oz.) block whole milk mozzarella cheese,cut in thin slices. shopping list
How to make it
- Preheat grill to med-high(350-400) Spray grill with non-stick nonflammable cooking sprat
- Cut off bottom and top of eggplant. Cut each eggplant lengthwise into 1/4" thick slices. Sprinkle each slice evenly with salt and pepper. Grill eggplant,covered with grill lid for 4 minutes per side ;set aside
- Preheat oven to 400. Lightly grease an 11x7" baking dish Spread 1c marinara sauce over the bottom of prepared baking dish. Place 2 slices of eggplant over the marinara. Spread each eggplant slice with 1Tbs marinara sauce. Place basil leaves in a single layer over the sauce, Top each eggplant slice evenly with cheese slices,covering basil Repeat layers twice,beginning with eggplant and ending with cheese. Bake 20 mins or till sauce is hot and cheese is lightly browned. Serve immediately.
