Cornbread Chicken Pot Pie Recipe
This dish is a quick and easy to prepare. I always make it when I'm craving homecookin' but I'm too tired to actually cook. This is one of my boyfriend's favorites.

Ingredients
  • 2 cups cubed cooked chicken *the storebought packaged stuff is good esp. if you are in a hurry, but leftover roasted chicken works well too
  • 1 cup frozen mixed veggies
  • 1 can of condensed cream of mushroom soup *I prefer the lower sodium variety
  • 1 package Jiffy Cornbread Mix
  • 1 egg
  • 3/4 cup milk *skimmed works just fine
  • Shredded Cheese to garnish

Directions
  1. Preheat oven to 400 degrees
  2. Combine the chicken, veggies, and soup and press into in a 8x8 inch pan.
  3. In a medium bowl, mix together the cornbread mix, egg, and milk until well blended
  4. Pour batter over the chicken mixture.
  5. Bake for 35 mins or unitl crust is golden brown.
  6. Serve with as much cheese as desired over each portion.
