Bleu Cheese Tenderloin Filet Recipe

  • Full Tenderloin
  • Bacon
  • Blue Cheese
  • Bread crumbs
  • Mayo
  • Tyme prigs
  • Herbs De Provence or Italian Seasoning
  • Salt
  • Pepper
  • garlic

Directions
  1. Pull fat of tenderloin, then remove silver. You should also remove the tail and the head, this will leave you with a nice clean piece of meat to work with. Save the scraps, but discard the fat. Cut steaks into 6-7 ounce portions. With cut side up insert a knife into the steak to cut a pocket. Cover with a damp cloth.
  2. In a mixing bowl, put 1 1/2 cups of bread crumbs, 2 cups of blue cheese, 1 cup of mayo, and about a 1 1/2 TBSP of seasoning. Mix well. It should bind together well, but not be to wet. If wet, add bread crumbs to dry out some.
  3. Now fill your steaks with this mixture. After the steaks are done wrap with bacon. Be sure to cover the pocket with the middle of the bacon. To secure bacon in place use the tyme sprigs. Insert them into the two ends of the bacon and into the steak.
  4. Before grilling season with some salt, pepper and garlic. Then cook to your desired temp.

Alterations


It's important that you don't over cook on grill or this will be dry. I suggest cooking your bacon about 1/2 way before putting on grill, and adding a Blue Cheese sauce to cover the filet with when serving. This was an excellent recipe though!!!
