Chopped Broccoli Salad Recipe
This recipe was given to me by one of my students. It was a family recipe. It is FULL of nutrients AND tastes great. These are the kinds of foods we should be eating!

Ingredients
  • 3 cups chopped broccoli
  • 1 cup fresh parsley
  • 6 scallions, green part only, chopped
  • 1 Haas avocado
  • 2 Tbsp flax seeds
  • 2 Tbsp baked and chopped almonds
  • 2 fresh sliced carrots
  • 1/2 cup fresh mint leaves, chopped
  • 2 whole lemons, juiced
  • 2 Tbsp olive oil
  • salt and pepper

Directions
  1. Mix all together and enjoy!
