Scallops In Maple Cream Recipe
Made this during Cape Cod vacation. What a fabulous change of flavor ! Everyone loved this!

Ingredients
  • 1 1/2 lbs fresh sea scallops
  • 2 Tbs olive oil
  • 1 1/2 tsp Dijon mustard
  • 1/2 tsp fresh grated nutmeg
  • 2 1/2 cups heavy cream
  • 1/3 cup pure maple syrup ( also did this with sugarfree maple flavored syrup for a diabetic relative )
  • Coarse salt
  • Fresh cracked pepper
  • 2 Tbs fresh chopped dill
  • Fresh cooked angel hair pasta

Directions
  1. Mix cream and syrup.
  2. Bring to a boil and lower heat and simmer until reduced almost by half.
  3. Add nutmeg, mustard, salt and pepper.
  4. Stir and remove from heat.
  5. Get olive oil good and hot in pan and sear scallops on both sides .
  6. Cook and stir till tender being careful not to overcook., really only a few minutes oon each side
  7. Pour sauce over scallops and dust with chopped dill.
  8. I served these atop cooked pasta.
