Savory Salmon With Tangy Cool Tzatziki

- Salmon: shopping list
- 4 tbsp. EVOO shopping list
- 2 medium salmon fillets or 1 large salmon fillet shopping list
- 8 small white or button mushrooms, halved shopping list
- 2 tbsp. dried dill shopping list
- 1 lemon shopping list
- sea salt shopping list
- cracked black pepper shopping list
- Tzatziki: shopping list
- 1 cup Greek yogurt (Fage) -- Oikos is a great brand and is 0% fat shopping list
- 2 tbsp. dried dill shopping list
- 2 tbsp. EVOO shopping list
- 1 clove garlic, sliced shopping list
- 1/3 of a medium sized cucumber shopping list
- salt and pepper shopping list
How to make it
- Begin by preparing the tzatziki so it can set and really absorb the flavors.
- Chop cucumbers and strain all liquid in a cheese cloth or soak in paper towels.
- Strain yogurt also.
- Combine all ingredients in a food processor and blend until completey smooth.
- Chill.
- Preheat oven to 400.
- Grab a sheet of tinfoil about twice the length of your fish.
- Place half of the sheet on a baking tray allowing the rest of the foil to hang off.
- Lightly oil the foil and place fish on top.
- Lightly oil the top of the fillets and place mushrooms around the edges and on top.
- Sprinkle some sea salt and cracked pepper over the fillets.
- Season with the dill.
- Slice the lemon in rings and place them all over the top of the fillets and mushrooms.
- Close tin foil over the fish and crimp the edges.
- Leave the front end open slightly and it helps to create a little "chimney" tube in the top for steam release.
- BE EXTREMELY CAREFUL WHEN OPENING!!!!!!!

Anything tzatziki works for me. I actually tried once to grill chicken with it. It was quite interesting as it formed a crust on it, instead of melting on top of it. Love your recipe!
