Vegetables with Beans and Bulgur

- 2 1/4 cups water shopping list
- 1/2 tsp salt shopping list
- 1 tsp black pepper shopping list
- 1 cup dry bulgur shopping list
- 1/4 cup water shopping list
- 1 medium zucchini, sliced thin shopping list
- 1 medium carrot, sliced into thin rounds shopping list
- 1/2 lb mushrooms, sliced shopping list
- 1/2 large red pepper, diced shopping list
- 1/4 cup chopped red onion shopping list
- 19 oz cooked chickpeas, drained and rinsed shopping list
- 1/2 cup vegetable broth shopping list
- 2 Tbsp Dijon mustard shopping list
- 1 Tbsp fresh lemon juice shopping list
- 1 tsp garlic powder shopping list
- 1/4 cup parsley, chopped shopping list
How to make it
- Bring water, salt and pepper to a boil in a medium pot.
- Add bulgur and simmer rapidly 5 minutes. Cover, remove from heat and let stand 20 minutes.
- Meanwhile, heat 1/4 cup water over medium-high heat.
- Add zucchini, carrot, mushrooms, pepper, and onion. Saute, stirring, 7-8 minutes.
- Stir in chickpeas, broth, mustard, lemon juice and garlic powder. Bring to a simmer and cook 3 minutes longer.
- Remove from heat, stir in cooked bulgur and parsley, and serve.
