Ingredients
  • 1-1/2 Pounds Kumquats,firmly packed
  • 1 Cup Sugar
  • 1/2 Vanilla Bean
  • 2 Cups Water,(not tap water,buy a good drinking water)
  • 4 Cups Brandy(the best you can allow)

Directions
  1. Wash the kumquats and prick them about 8 times with a needle.
  2. In a large saucepan,bring the sugar,vanilla bean,and the water to a boil over low heat and simmer for 15 minutes.
  3. Add the kumquats,bring the syrup to a boil and simmer 5 minutes .
  4. Remove the saucepan from heat,with slotted spoon,remove kumquats into a 6 cup sterilized jar.
  5. Over high heat,reduce the syrup by half.
  6. Cool,then pour the syrup over the kumquats,discarding the vanilla bean.
  7. Pour in the brandy and seal.
  8. Store in a cool,dark place for at least a month before serving.
  9. Note: You may use the kumquats over ice cream,but use within a 6 months of preparing the brandy.
  10. Makes 6 Cups

This is served in a chinese restaurant in NYC...also mixed fruit without the brandy..Oh man alive I don't know how to thank you for this one. very high5
