- 6 Slices bacon shopping list
- 1/4 Cup Chopped green onion shopping list
- 1/4 Cup Chopped green pepper shopping list
- 1 Tablespoon flour shopping list
- 1 Tablespoon sugar shopping list
- 1/2 teaspoon celery seeds shopping list
- 1/4 teaspoon salt shopping list
- Dash pepper shopping list
- 1/2 Cup water shopping list
- 1/4 Cup vinegar shopping list
- 2 Cups Cubed Cooked potatoes shopping list
- 8(oz) Fully Cooked Smoked bratwurst,cut in 1/2" pieces(about 2 cups) shopping list
- 1/4 Cup chopped pimiento shopping list
- 2 Tablespoons butter shopping list
- 8 eggs,beaten shopping list
- 1/3 Cup milk shopping list
- 1/2 teaspoon salt shopping list
- Dash pepper shopping list
How to make it
- In large skillet cook bacon until crisp.
- Remove bacon and drain on paper towel.
- Reserve 3 Tablespoons drippings in skillet.
- Crumble bacon and set aside.
- Cook the green onion,and green pepper in reserved dripping until tender.
- Blend in flour,sugar,celery seeds,1/4 teaspoon salt and dash of pepper.
- Stir in water and vinegar.
- Stir constantly over medium-high heat until mixture thickens and bubbles.
- Fold in potatoes,bratwurst and pimiento.
- Heat until bubbly.
- Reduce heat and keep hot while scrambling eggs.
- In a large skillet,melt the 2 tablespoons of butter.
- Mix eggs with milk,1/2 teaspoon salt and dash of pepper.
- Add to melted butter in skillet and cook thoughout but still glossy and moist.
- Remove from skillet and place on a heated platter.
- Top with hot potato mixture.
- Garnish with crumbled bacon.
- Makes 6 to 8 servings
