Ingredients
  • 6 Slices Bacon
  • 1/4 Cup Chopped Green Onion
  • 1/4 Cup Chopped Green Pepper
  • 1 Tablespoon Flour
  • 1 Tablespoon Sugar
  • 1/2 teaspoon Celery Seeds
  • 1/4 teaspoon Salt
  • Dash Pepper
  • 1/2 Cup Water
  • 1/4 Cup Vinegar
  • 2 Cups Cubed Cooked Potatoes
  • 8(oz) Fully Cooked Smoked Bratwurst,cut in 1/2" pieces(about 2 cups)
  • 1/4 Cup Chopped Pimiento
  • 2 Tablespoons Butter
  • 8 Eggs,beaten
  • 1/3 Cup Milk
  • 1/2 teaspoon Salt
  • Dash Pepper

Directions
  1. In large skillet cook bacon until crisp.
  2. Remove bacon and drain on paper towel.
  3. Reserve 3 Tablespoons drippings in skillet.
  4. Crumble bacon and set aside.
  5. Cook the green onion,and green pepper in reserved dripping until tender.
  6. Blend in flour,sugar,celery seeds,1/4 teaspoon salt and dash of pepper.
  7. Stir in water and vinegar.
  8. Stir constantly over medium-high heat until mixture thickens and bubbles.
  9. Fold in potatoes,bratwurst and pimiento.
  10. Heat until bubbly.
  11. Reduce heat and keep hot while scrambling eggs.
  12. In a large skillet,melt the 2 tablespoons of butter.
  13. Mix eggs with milk,1/2 teaspoon salt and dash of pepper.
  14. Add to melted butter in skillet and cook thoughout but still glossy and moist.
  15. Remove from skillet and place on a heated platter.
  16. Top with hot potato mixture.
  17. Garnish with crumbled bacon.
  18. Makes 6 to 8 servings

Oh yes, I know this breakfast first hand because it's very similar to the Irish/Scottish/English breakfast. This is the best and thanks so much for posting it. You've got my "5" forks for sure ;)
