How to make it

  • In large skillet cook bacon until crisp.
  • Remove bacon and drain on paper towel.
  • Reserve 3 Tablespoons drippings in skillet.
  • Crumble bacon and set aside.
  • Cook the green onion,and green pepper in reserved dripping until tender.
  • Blend in flour,sugar,celery seeds,1/4 teaspoon salt and dash of pepper.
  • Stir in water and vinegar.
  • Stir constantly over medium-high heat until mixture thickens and bubbles.
  • Fold in potatoes,bratwurst and pimiento.
  • Heat until bubbly.
  • Reduce heat and keep hot while scrambling eggs.
  • In a large skillet,melt the 2 tablespoons of butter.
  • Mix eggs with milk,1/2 teaspoon salt and dash of pepper.
  • Add to melted butter in skillet and cook thoughout but still glossy and moist.
  • Remove from skillet and place on a heated platter.
  • Top with hot potato mixture.
  • Garnish with crumbled bacon.
  • Makes 6 to 8 servings
