Ingredients
  • Top and bottom Crust
  • 2 sticks butter
  • 1 pinch salt
  • 2 (8oz.) packages cream cheese
  • 3 cups all purpose flour*add more if needed
  • Pie fillings:
  • 1 pound boneless chicken breast or tenders
  • 2 cups potatoes, cut into small cubes
  • 1 cup chopped celery
  • 1 cup diced or cut small carrots
  • 1 onion, chopped
  • 1 can cream of chicken soup
  • 1 cup half and half
  • 1 cup chicken broth
  • 1/2 stick butter
  • 1 tablespoon olive oil
  • 1 can petite peas
  • 3 tablespoons flour mixed with 1/3 cup water.
  • pinch of garlic powder
  • pinch salt and pepper

Directions
  1. Crust:
  2. In a microwave safe bowl, soften the butter and cream cheese(about 30to 40 seconds or until softened)
  3. Stir in flour and salt.
  4. Mix well(using your hands work well here)
  5. Set aside until ready to use.
  6. Filling:
  7. Slice chicken into small bite size pieces.
  8. Heat oil and butter in skillet.
  9. Add chicken, onions, and celery and cook until chicken in no longer pick and onions are tender.
  10. Cook potatoes and carrots in boiling water until tender,drain.
  11. In large bowl, mix together the chicken, peas,cooked potatoes and carrots.
  12. Heat soup and broth until boiling.
  13. Reduce heat and stir in half and half and flour mixture.
  14. Continue to cook until sauce thickens a little.( if too thick add more water or half and half)
  15. Add to chicken mixture and add garlic powder and salt and pepper.
  16. Preheat oven to 350
  17. Spray mini or cupcake pans with nonstick spray.
  18. Divide dough into 1/2(top and bottom crust)
  19. Bottom crust: Divide into 12 pieces and push one piece of dough into bottom and up sides of muffin cups.
  20. Spoon sauce into each muffin cup.
  21. Using your hands, Pat out tops for each muffin cup and place on the top(no need to seal these)
  22. If you have little ones, you can decorate each individual pie with their initial or a little flower using any left over dough.
  23. Bake until golden brown(about 15 to 20 minutes) allow more time if doing one whole pie.
  24. Brush each top with a dab of melted butter before serving if desired!
  25. If you have left over sauce it can be frozen or refrigerated for another use such as soup base or dumpling base.

I am so sorry! I forget that not everyone is from here! Half and half is a mixture of half milk and half cream that is sold in the dairy section of the grocery. It is used in many recipes and as a coffee creamer. Hope this helps!
