Fresh Mango Pie

- Crust: shopping list
- 2 cups sifted flour shopping list
- 1 cup butter or margarine shopping list
- 1/2 cup walnuts, chooped shopping list
- cream cheese Filling: shopping list
- 1 package cream cheese (8oz.) shopping list
- 1 teaspoon vanilla shopping list
- 1 container Cool Whip (8-oz) shopping list
- Topping: shopping list
- 2 envelops Knox gelatin shopping list
- 1 cup cold water shopping list
- 1 cup boiling water shopping list
- 1 cup sugar shopping list
- 1/4 teaspoon salt shopping list
- 4 tablespoons lemon juice shopping list
- yellow food color, 2-3 drops shopping list
- 5 cups firm, ripe mangoes,chopped shopping list
How to make it
- Crust:
- Cut butter into flour until mixture clings together. Add nuts. Press into 9x13-inch pan. Bake at 350 degrees for 20-25 minutes. Cool.
- Cream Cheese Filling:
- Beat cream cheese ubtil soft: add vanilla. Fold into Cool Whip. Pour over crust. Refrigerate.
- Topping:
- Sprinkle gelatinover 1 cup cold water to soften. Add boiling water, sugar,salt, and stir until thoroughly dissolved. Add lemon juice and food coloring; stir to combine. Cool. Add mangoes and chill until gelatin begins to mold. Pour over cream-cheese filling. Refrigerate until firm.
