This is a delicious cake. Another great recipe from my daughter.

Ingredients
  • 3 c Flour
  • 1 ts Baking soda
  • 1/2 ts Salt
  • 1/2 ts Cinnamon
  • 3 Eggs
  • 2 c Sugar
  • 1 1/4 c Oil
  • 1 ts Vanilla
  • 1/4 c Orange juice
  • 2 c Peeled chopped apples
  • 1 c Chopped walnuts
  • 1 c Flaked coconut

Directions
  1. Preheat oven to 325°. Grease a 13x9x2" baking
  2. dish.
  3. Combine flour, baking soda, salt and cinnamon; set
  4. aside.
  5. Beat eggs and sugar; stir in oil, vanilla and
  6. orange juice. Mix in flour mixture slowly. Fold in
  7. apples, nuts and coconut. Transfer to baking dish;
  8. bake 1 hour, or until cake tests done.
