The English have Yorkshire Pudding and the South Africans have Vetkoek! Fill it with mincemeat, cheese or any thing else that comes to hand.

Ingredients
  • 250ml (1cup) cake flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 125 milk
  • 125 ml oil for frying

Directions
  1. Sift flour, baking powder and salt together.
  2. beat egg separately and add to flour.
  3. Add milk and mix until smooth
  4. heat oil in frying pan using a pot to deep fry also works well
  5. Drop a tablespoon of the mixture into oil.
  6. Don't make more than four at a time.
  7. Fry for two to three minutes on one side, then turn and fry for one minute on other side. Serve hot.
  8. Here in SA you can buy vetkoek dough pre made, its a favorite here!
  9. Our bought dough is more like bread dough, so when you have some left over bread dough, roll them in to balls let them sit while the oil is heating up, and flatten them to about 2.5 cm and drop them into the oil, turn after a few min, until golden brown.
