Ingredients

How to make it

  • Melt margarine over medium high heat in a 2 quart or larger saucepan.
  • Add mushrooms and onions and cook and stir for a minute.
  • Add rice and stir until it is coated with butter.
  • Add remaining ingredients.
  • Bring to a boil, then cover, lower the heat, and simmer 18 minutes. DO NOT PEEK!
  • All the liquid should have been absorbed; if not cook a minute or two longer.
  • Remove from heat and let it sit for 5 minutes.
  • Fluff with a fork and serve hot.

    March 27.17 We enjoyed this. I cut the recipe back to 3/4 cups rice and 1 1/2 cups homemade broth but halved the other ingredients and I'm glad that I did as it makes a huge amount. I chose this recipe as I had mushrooms and a red onion that I needed to use. I cooked the mushrooms first for about 5 minutes and then added the onions and cooked for another minute. Very tasty and quick!! Thanks for sharing.
