How to make it

  • In a small bowl combine the sour cream, garlic powder, parsley, salt, and pepper
  • Stir to combine, refrigerate until ready to use
  • Preheat the oven to 400
  • Using a wooden spoon as a cradle, place each potato in the spoon and make several parallel slits making sure not the cut all the way through
  • Place the garlic slices into the potato slits, alternating between slits
  • Place on a baking sheet
  • Drizzle with melted butter, olive oil, salt, and pepper, toss to coat
  • Bake until the tops are crispy and cooked through, about 1 hour
  • Serve with topped with herbed sour cream
