Garlic Hasselback Potatoes with Herbed Sour Cream

- 1lb. red new potatoes shopping list
- 5 garlic cloves, thinly sliced shopping list
- 4 tbsp butter, melted shopping list
- 2 tbsp olive oil shopping list
- salt and pepper shopping list
- ½ cup sour cream shopping list
- ½ tsp garlic powder shopping list
- 1 tbsp parsley, finely chopped shopping list
How to make it
- In a small bowl combine the sour cream, garlic powder, parsley, salt, and pepper
- Stir to combine, refrigerate until ready to use
- Preheat the oven to 400
- Using a wooden spoon as a cradle, place each potato in the spoon and make several parallel slits making sure not the cut all the way through
- Place the garlic slices into the potato slits, alternating between slits
- Place on a baking sheet
- Drizzle with melted butter, olive oil, salt, and pepper, toss to coat
- Bake until the tops are crispy and cooked through, about 1 hour
- Serve with topped with herbed sour cream
