Ingredients
  • 1- 4 pound beef prime rib roast (2-3 rib bones)
  • 1 teaspoon hickory smoke flavored salt
  • 1 teaspoon coarse ground black pepper
  • 1 teaspoon garlic powder
  • Applewood chips for smoking

Directions
  1. Soak applewood chips for at least 30-60 minutes.
  2. Light charcoal and wait until gray around the edges.
  3. Sprinkle hickory salt, pepper, and garlic powder all over roast.
  4. Put charcoal really low in a dome smoker and sprinkle applewood chips on top. Place rack at the very top...you want really low heat for this.
  5. Place roast on rack and put lid on the smoker.
  6. Smoke for 3 1/2-4 hours or until desired color is obtained.
  7. Serve with horseradish sauce.
