How to make it

  • Chicken:
  • Preheat oven to 400 degrees.
  • Take knife and make an opening between the skin and the chicken breast, creating a pocket for each breast.
  • Place a tbsp. of butter in each pocket, and massage into the chicken to smear over the chest area.
  • Mix the spices, salt, and pepper. Rub down the chicken.
  • Place in the oven to cook for about 1 hour.
  • Melt butter, and after the chicken has cooked for about 30 minutes, brush down with the butter.
  • Continue to do so for the rest of the hour about every 10 min.
  • After the hour is up you'll want to start to baste with the glaze and reduce the heat to about 350 degrees.
  • Baste every 10-15 min. for the next 30-40min. or until chicken is fully cooked.
  • Glaze:
  • Pour the can of cranberry sauce into a microwave safe bowl and mix with the orange juice concentrate.
  • Place in the microwave for about 1-2 min. on high.
  • Once it's done warming up you'll want to mash it or use a mixer to create a sauce like texture.
  • Mix in the spices and lemon juice.
  • Feel free to alter the measurements of the spices to your likely.
  • For people who like the extra umph, try stuffing the chicken with cinnamon sticks, orange slices, whole cloves, and dried or fresh cranberries.

    Oh man, that picture has my saliva glands in overdrive...beautiful! We love the "sweet/savory" flavors with meat, so I know this is bound to be a big success at your house. I will try this one for sure - thanks!
