Eggplant Bolognese Sauce

- olive oil shopping list
- half medium onion, chopped shopping list
- 3-6 garlic cloves, chopped shopping list
- 1 pound ground veal shopping list
- 1/2 cup dry white wine shopping list
- 1 35 ounce can whole tomatoes, pureed in blender shopping list
- 1 teaspoon Italian herbs shopping list
- 1 large Italian eggplant, cubed shopping list
- 1 pound pasta shopping list
- grated cheese shopping list
How to make it
- Heat some olive oil in saucepan over medium-low heat
- Cook onions until softened and translucent.
- Add garlic and cook for 1 minute.
- Add veal and cook until browned.
- Add wine and stir to deglaze pan.
- In a separate saute pan, brown eggplant cubes in olive oil.
- Add tomatoes and herbs to veal mixture.
- Add eggplant to sauce and cook over medium-low for 15 minutes.
- Serve over pasta with cheese on top.
