Eggplant Bolognese Sauce Recipe
This is a twist on classic bolognese sauce, and would be good either with or without the meat.

Ingredients
  • olive oil
  • half medium onion, chopped
  • 3-6 garlic cloves, chopped
  • 1 pound ground veal
  • 1/2 cup dry white wine
  • 1 35 ounce can whole tomatoes, pureed in blender
  • 1 teaspoon Italian herbs
  • 1 large Italian eggplant, cubed
  • 1 pound pasta
  • grated cheese

Directions
  1. Heat some olive oil in saucepan over medium-low heat
  2. Cook onions until softened and translucent.
  3. Add garlic and cook for 1 minute.
  4. Add veal and cook until browned.
  5. Add wine and stir to deglaze pan.
  6. In a separate saute pan, brown eggplant cubes in olive oil.
  7. Add tomatoes and herbs to veal mixture.
  8. Add eggplant to sauce and cook over medium-low for 15 minutes.
  9. Serve over pasta with cheese on top.
