How to make it

  • Heat some olive oil in saucepan over medium-low heat
  • Cook onions until softened and translucent.
  • Add garlic and cook for 1 minute.
  • Add veal and cook until browned.
  • Add wine and stir to deglaze pan.
  • In a separate saute pan, brown eggplant cubes in olive oil.
  • Add tomatoes and herbs to veal mixture.
  • Add eggplant to sauce and cook over medium-low for 15 minutes.
  • Serve over pasta with cheese on top.
