Baked Garlic Soup

- 2 cups diced fresh tomatoes shopping list
- 1 can (15 oz) garbanzo beans, undrained shopping list
- 4 summer squash, sliced shopping list
- 2 large onions, sliced shopping list
- 1/2 green pepper, diced shopping list
- 1 1/2 cup dry white wine shopping list
- 5 cloves fresh garlic, minced shopping list
- 1 bay leaf shopping list
- 2 tsp salt shopping list
- 1 tsp basil shopping list
- 1/2 tsp paprika shopping list
- 1 1/4 cups grated monterey jack cheese shopping list
- 1 cup grated romano cheese shopping list
- 1 1/4 cups heavy cream shopping list
How to make it
- Generously butter inside of 3 qt. baking dish. Combine all ingredients except cheese and cream in dish.
- Cover and bake 1 hour at 375. Stir in cheese and cream, lower heat to 325 and bake 10-15 minutes longer. Do not allow to boil.
