Ridiculously Easy Cream Of Tomato Soup Recipe
Easy and fast to make -- perfect for lunch, especially with a grilled sandwich on the side. The flavour depends on the tomatoes, so use a good brand of canned tomatoes. And cooked tomatoes are rich in lycopene, which is good for ya!

Ingredients
  • 2 Tablespoons butter or oil (or mix of both)
  • 1 onion, very finely chopped
  • 2 Tablespoons unbleached flour
  • 2 cups reduced fat milk (1%), warmed in the microwave
  • 1 28 oz. can crushed tomatoes
  • a generous splash of Worcestershire sauce (if you're vegetarian, omit that)
  • a handful of finely chopped fresh herbs to garnish (I use lovage, tarragon, parsley or chives, depending on what's growing in the garden)

Directions
  1. Sauté onion in butter or oil over medium heat until soft and transparent.
  2. Sprinkle with flour gradually and work carefully to moisten flour without creating lumps.
  3. Add the cups of warm milk and stir until mixture thickens.
  4. Purée with wand mixer to remove any lumps and crush the onions.
  5. Add can of tomatoes and Worcestershire sauce
  6. Heat through and stir well.
  7. You can purée the soup entirely with the wand mixer if you prefer a smoother soup (which I do)
  8. Taste and adjust seasonings with salt, sugar

Delicious and wonderful soup. Really fresh and flavorful. I liked it pureed best.
