Michaels Spicy Chipotle Sausage Stew

- 1/4 cup olive oil shopping list
- 8 sausages (I used 4 garlic chicken sausages and 4 turkey sausages, as my wife doesn’t eat pork — but use anything you like) shopping list
- 1/2 cup coarsely chopped red pepper shopping list
- 1/2 cup coarsely chopped green pepper shopping list
- 1 29 oz. can tomato sauce shopping list
- 1/2 large yellow onion — coarsely chopped shopping list
- 5 plum tomatoes — coarsely chopped shopping list
- 1 yellow squash or zucchini — coarsely chopped shopping list
- 1 clove garlic — minced shopping list
- 1 tbs. dried red pepper flakes shopping list
- 3 chipotle peppers in adobo sauce — finely chopped shopping list
- 2 tbs. paprika shopping list
- 1 tsp. ground cumin shopping list
- 1 tbs. sea salt shopping list
- 1 tbs. ground pepper shopping list
How to make it
- * Cut sausages into 1/2 inch pieces.
- * Add olive oil to a large preheated skillet. Add sausages. Allow to brown.
- * Add sausages and reserve oil to crock pot.
- * Add red pepper, green pepper, onion, squash, tomatoes, garlic, chipotles to crock pot.
- * Add paprika, cumin, salt, pepper, dried red pepper flakes.
- * Pour tomato sauce over mixture.
- * Heat on LOW for 6 to 8 hours. (Or, on HIGH for 3 to 4 hours).
