Ingredients
  • 1 lb. linguicia (Portuguese Sausage), casing removed and chopped
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 3 cloves garlic, minced
  • 1 good pinch of dried crushed red pepper flakes
  • 1 28 oz can crushed tomatoes
  • fresh parsley, chopped
  • 1/2 pound penne or spaghetti, cooked

Directions
  1. Add linguicia, onion, pepper, and garlic in a deep skillet. Cook until linguicia is slightly brown on the edges and the vegetables are tender.
  2. Add crushed tomatoes, red pepper flakes and parsley. Simmer until slightly thickened, about 30 minutes.
  3. Toss in cooked pasta, and toss.
