	breakfast brunch potatoes casserole ham pork peppers onion mushrooms cheese cheddar parmesan cottage eggs

Ingredients

4 cups diced ham

1-1/2 cups frozen shredded hash brown potatoes thawed

1/4 cup chopped green peppers

1/4 cup chopped red peppers

1/2 cup chopped white onion

1/2 cup chopped fresh mushrooms

1 cup shredded sharp cheddar cheese

1/2 cup shredded Parmesan cheese

1 cup sour cream

1 cup cottage cheese

8 eggs

1 teaspoon white pepper

1 teaspoon thyme

1 teaspoon paprika

Directions

Mix all ingredients together except paprika in a large bowl.

Bake in two pie plates for 1 hour at 350.

Sprinkle with paprika.

Serve with sour cream and chopped fresh chives.
