OUT OF THIS WORLD BREAKFAST POTATO PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Victor Estate in Allen, Texas in 1981.

Ingredients
  • 4 cups diced ham
  • 1-1/2 cups frozen shredded hash brown potatoes thawed
  • 1/4 cup chopped green peppers
  • 1/4 cup chopped red peppers
  • 1/2 cup chopped white onion
  • 1/2 cup chopped fresh mushrooms
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 8 eggs
  • 1 teaspoon white pepper
  • 1 teaspoon thyme
  • 1 teaspoon paprika

Directions
  1. Mix all ingredients together except paprika in a large bowl.
  2. Bake in two pie plates for 1 hour at 350.
  3. Sprinkle with paprika.
  4. Serve with sour cream and chopped fresh chives.
