How to make it

  • Butter 8x8 brownie pan and the sides of large saucepan.
  • In saucepan to medium heat, combine sugar, corn syrup, salt, milk, chocolate, cayenne pepper and cinammon.
  • Stir frequently until melted, then occasionally to 235 degress.
  • Place butter on top of mix but do not stir.
  • Cool for 1-2 hours until 110 degrees.
  • Using wooden spoon, lift spoonfuls of mix into air and allow to drop back into pan until mixture is slightly thicker and no longer shiny (about 5 minutes).
  • Quickly scrape into buttered brownie pan, spreading to even thickness.
  • Allow to cool (about 20 minutes).
  • Enjoy!

    I love spiced fudge. I agree, it is yum! Very, very similar to a spiced fudge that I make. Try doubling your salt; it will help to bring out the spice and round out the flavors. I think you'll notice a real difference:)

    Never seen it...but I'll have to check it out. I have a pan of this fudge on my countertop right now. I made it with Dagoba 100% "prima materia" chocolate bars. To die for!! I WAS dieting....lol
