Apple Butter Spice Muffins Recipe

I love apple butter... and the muffins have a center of apple butter.... kind of like a jelly donut!! the recipe is from a favorite Brand Name cookbook,... for some reason it doesn't give any brand name for this recipe!!!!

Ingredients
- 1/2 cup sugar
- 1 teasp. cinnamon
- 1/4 teasp. nutmeg
- 1/8 teasp. allspice
- 1/2 cup pecans or walnuts, chopped
- 2 cups flour
- 2 teasp. baking powder
- 1/4 teasp. salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1/4 cup apple butter
Directions
- in large bowl... combine sugar, cinnamon, nutmeg, and allspice
- in small bowl... toss 2 TBSP. sugar mixture with the pecans
- to the sugar mixture in the large bowl... add flour, baking powder, and salt. mix well
- in medium bowl.... combine milk, oil, and egg. mix well
- add to the flour mixture
- stir just until mixture is moistened... do not over mix
- grease or paper line 12 ( 2 1/2-inch ) muffin cups
- spoon 1 TBSP. batter into each cup
- spoon 1 teasp. apple butter into each cup
- spoon remaining batter evenly over apple butter
- sprinkle pecan mixture over each muffin
- in preheated 400' F oven bake 20 - 25 minutes or until a toothpick inserted in the middle of muffin comes out clean
- immediately remove from pan
- cool on wire rack for 10 minutes
- serve warm or cold
- makes 12 muffins
