Rosemary Cottage Fries

- 4 large potatoes (russets, yukon gold or red bliss) shopping list
- 4 T. olive oil, divided shopping list
- 2 T. fresh rosemary or 3 T. dried rosemary shopping list
- salt and pepper to taste shopping list
How to make it
- Scrub potatoes; do not peel. Steam or microwave potatoes until barely tender. About 8-10 minutes. Remove and cool slightly.
- When potatoes are cool enough to handle, carefully cut potatoes into 1" rounds.
- Heat olive oil in a large skillet over medium high heat.
- Add potatoes in a single layer and cook till golden brown on one side. Turn potatoes over, sprinkle with rosemary salt and pepper.
- Continue to cook until second side is golden.
- Taste, correct seasoning and serve hot.
