How to make it

  • Beat cream cheese and sugar until smooth, add eggs one at a time; mixing well after each addition. Beat in yogurt, lemon zest and vanilla.
  • Pour about 1/3 of the mixture over prepared crust; sprinkle blueberries overtop. Gently spoon remaining mixture evenly overtop
  • Bake in a 425F oven for 10mins. Reduce temp. to 350 and bake for about 30 mins. or until cheesecake is set; but still jiggly in center.
  • Cool slightly
  • Mix sour cream and 1/4c sugar until smooth; spread evenly over cheesecake and return to oven and bake until topping is set; approx. 10 minutes.
  • Let cheesecake cool 10 mins. then run a sharp knife around inside edge od springform to prevent top from cracking.
