Mehti masala-Master Recipe

- 500 grams Mehti seeds {fenugreek},,,coarsely crushed shopping list
- 500 grams coarse / rough salt shopping list
- 1/2 cup turmeric powder shopping list
- 500 grams coarsely crushed red chillies shopping list
- 750 ml cooking oil shopping list
- 1/2 tab asafoetida {ground} shopping list
- few sprigs curry leaves shopping list
- 5 whole dry red chillies {optional} shopping list
How to make it
- crush coarse salt slightly andplace in heatedoven to dry out slightly
- heat oil in deep pot,till oil begins to exude abluish smoke
- add whole red chillies {if using}
- lower heat and add crushed mehti seeds ...stir for 2 mins until golden colour
- add salt ...stir 1 min
- add rest of ingredients.....except asafoetida
- braise on low heat ...for 15-20 mins ...until a lovely deep ruby colour
- remove from stove and add asafoetida
- cool and bottle
