Ingredients
  • Chicken
  • 2 lg boneless skinless chicken breasts
  • Liquid Egg White
  • Fiber One Original cereal
  • Non-Stick cooking spray
  • Mozzarella cheese, sliced
  • Grated Parmesan Cheese
  • Sauce
  • 1 15oz can Tomato Sauce
  • 1 15oz can diced tomatoes with Garlic & Oregano
  • Garlic Powder
  • Italian seasoning
  • Salt & Pepper
  • Sugar

Directions
  1. In a small pot, combine tomato sauce & diced tomatoes.
  2. Add remaining seasonings to desired taste. Sugar is optional.
  3. Keep stove setting on low for sauce to "marry."
  4. Preheat oven to 350.
  5. Use non-stick cooking spray to grease small baking dish.
  6. Use food processor to grind Fiber One Cereal into bread crumb like consistency.
  7. Dip each chicken breast in the egg white and then in the Fiber One "bread crumbs."
  8. Place chicken breasts in the greased baking dish and bake uncovered for 30 mins or until done. Turn over at 15mins.
  9. Place 1 slice of Mozzarella cheese on each chicken breast and bake until melted.
  10. Serve with marinara sauce and parmesan cheese.
  11. **You can also season the "bread crumbs" to add flavor to the Chicken.
  12. **Pasta can also be served.
