Cool-as-a-cucumber Soup Recipe
This is a really nifty soup to cool you down on a hot summer day! Lots of tasty melded flavors! Go lightly on the jalapeno chile if you don't want a zing!

Ingredients
  • 3 medium cucumbers, peeled, seeded, cut into chunks
  • 1 1/2 cups chilled nonfat plain yogurt
  • 2 green onions
  • 1 small jalapeno chile, seeds removed
  • 2 Tablespoons chopped fresh cilantro
  • 1 Tablespoon chopped fresh mint
  • 1 small yellow bell pepper, diced
  • 1 tomato, seeded and diced
  • Fresh cilantro sprigs

Directions
  1. Process first 6 ingredients in blender or processor until smooth.
  2. Transfer mixture to bowl. Refrigerate
  3. (Can be prepared 4 hours ahead of time.)
  4. Ladle soup into bowls.
  5. Garnish with bell pepper, tomato and cilantro sprigs and serve.

What a coincidence, I have a large rubbermaid tup sitting at home half full of cucumbers. This would be a great way to used some of them up... Just in the nick of time..;-)~ Thanks.... Jim
