Ingredients
  • 6 pounds black cod gutted head and tail on
  • 1/4 cup sliced ginger
  • 1/4 cup sliced scallions
  • Cabbage for lining steamer
  • 2 tablespoons soy sauce
  • Peanut oil heated to simmer

Directions
  1. Score the skin on the fish.
  2. Place some ginger and scallions inside the cavity and the rest on the skin.
  3. Put fish in a steamer lined with cabbage leaves.
  4. Steam for 10 minutes.
  5. Pour soy sauce over fish followed by hot peanut oil.

Thanks Chef, I have been gathering whole fish recipes and I'll add this. Sounds good Clean pure fish taste. Does the ginger dominate the dish?

Alterations


Due to limitation in ingredients, I will be using lapulapu (spotted rock bass) as an alternative for the fish, red onion (replacing scallion) and sesame oil to replace peanus oil. I hope I will not ruin the recipe.
