Easy and fun. Kids will like making these Cookie Stacks and EATING these. This one is from my college roommate who ended up teaching first grade for 30 yrs.

Ingredients
  • 1 cup white sugar
  • 1 stick melted butter
  • 2 eggs
  • 1 can crushed pineapple (well drained)
  • 3/4 cup chopped walnuts
  • Box of vanilla wafers
  • Box of Dream Whip
  • coconut (can be colored)

Directions
  1. Blend together the sugar, butter, and eggs.
  2. Blend in the pineapple and walnuts.
  3. Spread this mixture between vanilla waferes, make the stacks 5 cookie high.
  4. After making the Dream Whip, frost the stack of wafers and roll in the coconut.
  5. Refrigerate these overnight.
