Apricot Almond Streusel Coffeecake

- 1/2c soft butter shopping list
- 1c sugar shopping list
- 2 eggs shopping list
- 1tsp vanilla shopping list
- 2c all-purpose flour shopping list
- 1tsp baking powder shopping list
- 1tsp baking soda shopping list
- 1tsp cinnamon shopping list
- 1/2tsp ginger shopping list
- 1/2tsp salt shopping list
- 1c sour cream shopping list
- 11/2c chopped apricots shopping list
- 1/2c chopped blanched almonds shopping list
- TOPPING shopping list
- 1/3c slivered almonds shopping list
- 1/4c packed brown sugar shopping list
- 1/2tsp cinnamon shopping list
- 1/2c icing sugar shopping list
- 1T orange juice shopping list
- 1/4c chopped dried apricots shopping list
How to make it
- Grease a 10" tube pan; line bottom with parchment; set aside.
- In a large bowl, beat butter and sugar until fluffy. Beat in eggs, one at a time; beat in vanilla.
- In a separate bowl whisk together flour and remaining dry ingredients. Add to butter mixture alternately with the sour cream: starting and ending with flour mixture.
- Stir in apricots and almonds: spread evenly in prepared pan.
- TOPPING
- Stir together almonds, sugar and cinnamon, sprinkle over batter.
- Bake in a 350F(180C) oven for 55mins. or until tested done. Let cool on rack.
- In a small bowl whisk together icing sugar and orange juice; drizzle over cake and sprinkle with chopped apricots if you wish.
