How to make it

  • Take a sheet of cooking foil and butter it well, season the butter with salt and pepper and sprinkle some of the tarragon over.
  • Place the wings on the foil and add the rest of the tarragon and a little more salt and pepper.
  • Fold the foil to make an envelope and tightly seal it.
  • Place into an oven heated to 180 degrees Centigrade and cook for no more than ten minutes.
  • Rest the fish for two minutes then break open the foil and serve up with a slice or two of lemon and whatever vegetables you have.

    put the skate wings as sugested in the oven for 10 minutes was not cooked so had to put them n the fryng pan to cook.

    Ray or Skate is a fish, related to shark. They look like Manta rays and, as far as I am aware, only the wings are eaten . Elqab89 knew, isn't she clever?

    I love skate - it has such a sweet and tasty meat. I usually fry it lightly in the pan, so this is a nice recipe I can use for it.
