Ingredients
  • Ray wings
  • Fresh French Tarragon
  • Lemon
  • Butter
  • Salt and pepper

Directions
  1. Take a sheet of cooking foil and butter it well, season the butter with salt and pepper and sprinkle some of the tarragon over.
  2. Place the wings on the foil and add the rest of the tarragon and a little more salt and pepper.
  3. Fold the foil to make an envelope and tightly seal it.
  4. Place into an oven heated to 180 degrees Centigrade and cook for no more than ten minutes.
  5. Rest the fish for two minutes then break open the foil and serve up with a slice or two of lemon and whatever vegetables you have.

What are ray wings? Pardon my ignorance, I've never heard of them before!


I love skate - it has such a sweet and tasty meat. I usually fry it lightly in the pan, so this is a nice recipe I can use for it.


WHAT ARE RAY WINGS?


Ray or Skate is a fish, related to shark. They look like Manta rays and, as far as I am aware, only the wings are eaten . Elqab89 knew, isn't she clever?
