Fresh Green Bean Soup Recipe
I needed something different to do with a surplus of beans I had that would be tastey and like a meal in itself. You could definitely add ham, bacon, or salt pork if you'd like!

Ingredients
  • 2 qts. fresh green and/or yellow beans--cut into 2" pieces
  • 1 lrg. onion--finely diced
  • 4 Tbsp margarine
  • 3 Tbsp AP flour
  • 2 c water
  • 10 small red potatoes--diced
  • 2 c milk
  • 1 lrg. can of Chicken Stock--more as needed
  • 2 chicken or vegetable bouillon cubes
  • 2 Tbsp lemon juice
  • salt and pepper
  • 1 Tbsp. No salt all purpose seasoning blend
  • 1/4 c dried parsley
  • 1 heaping tsp. minced garlic (optional)
  • 2 c sour cream

Directions
  1. Saute onion in margarine until onion is translucent, but not brown.
  2. Add flour and stir, coating all onions and continue to cook for 1 min.
  3. Slowly add 2 c water, stirring constantly and bring to boil.
  4. Add beans, potatoes, milk, stock, bouillon, lemon juice, seasoning, parsley and garlic.
  5. Add more stock to cover, as needed.
  6. Salt and pepper to taste.
  7. Cook for 1 hour on medium or until beans and potatoes are fork tender.
  8. Take soup pot off heat and stir in sour cream well.
  9. Serve with a hearty dark bread.
  10. May easily be halved or doubled.

I belong to a CSA group and have a ton of beans right now. This looks like a solution. Has anyone tried Yogurt instead of sour cream?
