I made this dinner on a whim tonight. What was supposed to be turkey burgers became stuffed peppers! Steamed Zuchinni complimented this dish. SO Yummy!

Ingredients
  • 1lb Ground Turkey
  • 1/2 Cup Yellow Onion, chopped
  • 2 Tbsp Dijon Mustard
  • 1 Tsp Garlic Powder
  • 1 Tsp Crushed Red Pepper Flakes
  • 3 Tbsp Bread Crumbs
  • Salt & Pepper, to taste
  • 1/2 Beef Boullion cube
  • 4oz Sour Cream
  • 4oz Shredded Colby Jack Cheese
  • 1/2 Cup Cooked White Rice
  • 1 Cup Hot Water
  • 1/2 Beef Boullion cube
  • 5 Green Peppers, top removed, deseeded, deveined and sliced in half.

Directions
  1. In a bowl, combine Ground turkey, onion, mustard, crushed red pepper flakes, garlic powder, 1/2 beef boullion cube, bread crumbs, salt and pepper.
  2. Place meat mixture into a fry pan and cook until meat is cooked thru and onions are transparent.
  3. Meanwhile, cook rice per directions.
  4. Once meat mixture is done, drain grease and pour into bowl.
  5. Stir in Sour cream, rice, & cheese. Mix thoroughly.
  6. Preheat oven to 350.
  7. In a 13x9in baking dish, arrange green pepper halves. Fill each halve with meat mixture.
  8. Disolve remaining 1/2 beef boullion cube in hot water. Pour into bottom of baking dish.
  9. Cover stuffed peppers with foil and bake for 30mins.
  10. Once 30mins is complete, uncover and sprinkle shredded cheese on top of peppers.
  11. Bake, uncovered, for another 10 mins.
  12. Serve & Enjoy!
