Ras Malai

- For the malai shopping list
- 2 lbs whole milk ricotta cheese shopping list
- 1/2 cup sugar/splenda(yep splenda) shopping list
- for the ras shopping list
- 2 cups half and half shopping list
- 2TBSP sugar shopping list
- 1 tsp ground cardamom shopping list
- a pinch of saffron shopping list
- garnish shopping list
- almonds shopping list
- hardware shopping list
- 1 mini muffin pan (makes about 24 mini muffins) shopping list
How to make it
- Preheat your oven to 350F
- drain or remove any excess liquid from the cheese and make sure it dries for about 5 mins
- Mix the ricotta cheese and 1/2 cup sugar together until well incorporated, it should be slightly sweet to taste, not too much.
- spoon the cheese mixture into the miffin pan, about two spoons in each cup and even out the texture on top...it does not have to be perfect. cover the prepared pan loosely with aluminum foil.....you want to avoid the cheese mixture from turning brown. place into the oven to bake for 35-40 mins, check at 35 mins, inserted toothpick should come up clean.
- let cheesecakes cool down completely in the pan before removal.
- meanwhile, bring the half and half, sugar, cardamom and saffron to a boil and reduce to half of its original volume.
- add the cooled cakes into the reduced milk(ras) and let sit on medium heat for about a minute.
- remove cakes and liquid to a serving dish, garnish with almonds and allow to cool before placing into the refrigerator for about an hour
- serve chilled
