Ingredients
  • 16 ounces Guinness stout
  • 4 pound chuck roast
  • 2 tablespoons prime rib rub seasoning
  • 2 tablespoons vegetable oil
  • 2 large onions coarsely chopped
  • 1 clove garlic minced
  • 2 cups beef stock
  • 2 tablespoons browning liquid
  • 3 tablespoons cold water
  • 2 tablespoons cornstarch

Directions
  1. Preheat oven to 450.
  2. Pour Guinness into bowl and set aside so beer flattens.
  3. Rub roast with prime rib rub seasoning.
  4. In large pan over medium high heat add vegetable oil.
  5. Sear roast on each side until browned.
  6. Immediately remove meat from pan and set in large roasting pan.
  7. Coarsely chop onions and add to pan along with garlic.
  8. Add stock and browning liquid.
  9. Roast in preheated oven 1 hour.
  10. Reduce heat to 350 and add Guinness.
  11. Liquid level should be at least halfway up side of roast.
  12. Roast an additional 2 hours checking liquid level periodically and adding water if needed.

Made this today. I made some alterations for it going into a crockpot instead of in the oven. I did brown the roast well on the stovetop as directed. Don't want grey beef coming to the table :)

1. Thickly sliced onions to make a bed on the bottom of the crock pot on which to set the beef.

2. Sliced the garlic and inserted it into slits in the beef as I think that will imbue well crockpotting.

3. Ran myself out of beef broth so I substitued onion soup mix with a liberal shot of worstershire. I made a bit more liquid - 3 cups instead of 2 for crockpotting purposes.

4. Didn't have anything labeled "prime rib rub" so I made my own using some mediterranean marsala, garlic powder, cayenne, ground mixed pepper and mint.
