Penne With Red Peppers Tomatoes And Onions Recipe
This recipe is tasty and quick to make! I always make this for dinner when I get home late because it's so easy and I always have the ingredients on hand. Hope you enjoy!

Ingredients
  • 1/2 lb penne pasta
  • 1 large red pepper
  • 2 small tomatoes
  • 1 small onion
  • Approx. 2 tsp dried thyme
  • Approx. 2 tsp dried rosemary
  • Approx. 1 tsp dried oregano
  • Cheddar cheese (shredded)

Directions
  1. Slice the red pepper, tomatoes, and onion into strips.
  2. Heat some olive oil over medium-low heat in a medium sized sauce pan
  3. Add the red pepper, tomatoes, onion and spices into the sauce pan (note that the amounts listed in the ingredients section are very approximate. I recommend just eyeballing the amounts!)
  4. Cover the sauce pan and cook until the veggies are soft. The tomatoes should create a nice sauce.
  5. Cook the penne and add the red pepper sauce on top.
  6. I like to add about a cup of cheddar cheese on top of the pasta, but you may prefer to add less if you want it to be less cheesy (and healthier!)
