Buffalo Chicken Mac And Cheese Recipe
Buffalo chicken dip meets mac and cheese. This is a twist on the ever so popular buffalo chicken dip and mac and cheese. The flavors work well together! Enjoy

Ingredients
  • 1 pound small elbow macaroni
  • 2 cups chopped green onions (about 8 large),divided
  • 8 tablespoons (1 stick) butter, divided
  • 1 cup chopped onions
  • 2 large garlic cloves, chopped
  • 1/2 cup all purpose flour
  • 4 cups whole milk
  • 4 oz. cream cheese
  • 1 pound sharp cheddar cheese, coarsely grated (about 4 cups packed)
  • 4 oz. smoked cheddar (extra for topping if desired)
  • 4 oz. provolone cheese
  • 8 fried chicken tenders, chopped(I use popeyes, KFC's or Caines)
  • salt and black pepper
  • 1 cup hot pepper sauce (preferably Frank's Red Hot Original)

Directions
  1. Cook macaroni in large pot of boiling salted water until just tender but still firm to bite, drain, and placed in large bowl.
  2. Melt 6 tablespoons butter in same large pot over medium heat.
  3. Add chopped onions and garlic.
  4. Cover; sauté until onions are soft but not brown, stirring often, about 4 minutes.
  5. Add flour; stir 2 minutes.
  6. Gradually whisk in milk.
  7. Bring to boil, whisking constantly.
  8. Reduce heat and simmer sauce for about 2 minutes.
  9. Add all cheeses, cream cheese, 1 1/2 cups of the green onions, salt, and pepper.
  10. Whisk until cheeses melt and sauce is smooth, about 2 minutes. Remove from heat.
  11. Mix cheese sauce into macaroni.
  12. Add chicken.
  13. Place in 13x9x2-inch glass baking dish.
  14. Top with additional shredded cheddar cheese or bleu cheese crumbles and 1/2 cup chopped green onions
  15. Preheat oven to 350°F.
  16. Melt remaining 2 tablespoons of butter in microwave.
  17. Stir in hot pepper sauce.
  18. Spoon 1/3 mixture over mac and cheese(reserve remaining to pass around as extra sauce for individual taste)
  19. Bake macaroni uncovered until heated through, about 30 minutes.
  20. Serve with the extra sauce on the side.
