How to make it

  • In a mixing bowl, cream butter and confectioner's sugar. Add lime peel; mix well.
  • Combine flour and salt; gradually add to creamed mixture. Press into a greased 13x9x2 baking pan. Bake at 350ยบ for 13-15 mins or just til edges are lightly browned.
  • Meanwhile, in mixing bowl, beat eggs and sugar. Combine the flour ad baking powder. Add to egg mixture with lemon juice and peel; beat until frothy.
  • Pour over hot crust. Bake for 20-25 mins or til light golden brown. Cool on wire rack. Dust with confectioner's sugar. Cut into squares. Store in the fridge.

    I am going to pass this GREAT "5"FORK Recipe on to my Granddaughter because she Loves to bake with Lemon and Lime!...In fact I do, too, so I will probably try these 'Bars' out myself!
