  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup seedless raspberry jam
  • 1/2 cup shredded coconuts
  • 3/4 cup finely chopped walnuts

Directions
  1. In a large mixing bowl, cream butter and sugar until light and fluffy.
  2. Beat in egg and vanilla.
  3. Combine flour, salt and baking powder.
  4. Gradually add to creamed mixture and mix well.
  5. Roll out dough between waxed paper into a 12-in. square.
  6. Remove top piece of waxed paper. Spread dough with jam, and sprinkle with coconuts and walnuts.
  7. Roll up tightly jelly-roll style; wrap in plastic wrap.
  8. Refrigerate for 2 hours or until firm.
  9. Unwrap dough and cut into 1/4-in. slices.
  10. Place ungreased baking sheets.
  11. Bake at 375° for 9-12 minutes or until edges are lightly browned. Remove to wire racks to cool.
