Fagioli Tuscano Soup

- 1 baking potato, diced shopping list
- 1 large tomato, chopped shopping list
- 1/2 cup onion, minced shopping list
- 1 lb Tuscan kale, chopped shopping list
- 8 cloves garlic, cut in half shopping list
- 1/2 tbsp coarse sea salt shopping list
- 1/4 tsp crushed red pepper flakes shopping list
- 1/4 tsp ground black pepper shopping list
- 6 1/2 cups water shopping list
- 19 oz cooked kidney beans, drained and rinsed shopping list
How to make it
- Combine all ingredients in a large soup pot.
- Bring to a boil, then reduce heat and simmer 1 1/4 hours.
- Puree smooth in a blender or food processor, then return to pot and stir in kidney beans.
- Keep warm until redy to serve.
