Broccoli And Potatoes with tomato And Olives

- 1 bunch of fresh broccoli- cut into large florets, stem peeled and sliced shopping list
- 1 onion roughly sliced shopping list
- a handful of baby yukon gold potatoes cut in 1/2 (or one large potato cut into small chunks) shopping list
- 1 tomato roughly chopped (or a handful of grape tomatoes cut in 1/2) shopping list
- 5 or 6 black kalamata olives shopping list
- olive oil shopping list
- salt shopping list
How to make it
- Place all ingredients in a medium saucepan or a large skillet with a lid.
- Sprinkle with salt to taste (about 1 tablespoon).
- Drizzle with olive oil (drizzle around pan twice).
- Add about 1/4 cup water and toss well.
- Cover and let simmer on medium high heat for about 15 minutes, or until broccoli and potatoes are tender and onions are translucent (stir occasionally).
