Achiote oil is used in Caribbean and Latin American cooking,mostly for it's bright yellow color.Very good for rice and seafood dishes.It has a delicate nutty flavor.

Ingredients
  • 1/4 cup annato seeds
  • 1/2 cup corn oil or vegetable solid type shortening

Directions
  1. Simmer seeds in oil in a small saucepan for ten minutes.
  2. Strain seeds,store in a clean jar in a cool dry place.Keeps for many weeks
