Kitchen Sink Guacamole

- 2 or 3 avocados, peeled, pitted and coarsely chopped shopping list
- 1 small cucumber peeled and seeded, coarsely chopped shopping list
- 5 green onions , sliced shopping list
- 1 small tomato, diced shopping list
- 2 or 3 pickled pepperoncini or greek peppers, chopped, plus a tablespoonful of the brine shopping list
- 1 or 2 jalapeno peppers, minced shopping list
- 2 or 3 boiled eggs, chopped shopping list
- 2 or 3 cloves garlic minced or pressed shopping list
- salt to taste, about a teaspoon usually shopping list
- juice of half a lime ( a teaspoon or two of bottled juice may be substituted) Do not omit as it helps keep the dip from turning brown as avocados are apt to do. shopping list
- Some like this with a little chili powder or cumin added also. shopping list
How to make it
- Mash the avocado and cucumber together until only small lumps remain.
- Stir in remaining ingredients.
- If not serving immediately, cover with plastic wrap pressed onto the surface and refrigerate. Avocados tend to turn brown when exposed to air but it won't affect the taste. If the surface of the dip has turned brown while it tis chilling, just stir well before serving.
- Serve with tortilla or other chips. Nacho Cheese Doritos are very good with this dip.
